Coconut Revive

As I mentioned in my Mystic Mountain Mama post, one of my favorite restaurants in Cambridge is Life Alive. They make scrumptious, nourishing meals that are primarily plant-based. I highly recommend visiting their restaurants if you are in the Boston area (they also have locations in Lowell and Salem)!

My second love at Life Alive, after their Mystic Mountain Bowl, is their Coconut Alive Smoothie. I have recreated it in my college kitchen and renamed it “Coconut Revive.” Revive refers to its potent power to revive me from my senior thesis slumber.

Ingredients: 

  • 1 cup of almond milk
  • 1 frozen banana
  • 1 teaspoon of coconut oil
  • 4 tablespoons of coconut milk ice cream (Luna & Larry’s Coconut Bliss is my favorite)

In a blender, add the smoothie ingredients, and blend until smooth. Pour into a mason jar with a Cuppow lid. Drink immediately and enjoy!
