Almost Annie’s: Vegan Mac and Cheese

I often joke with my family that I became lactose-intolerant from all the Annie’s Mac and Cheese I ate as a child. Being diagnosed with celiac disease and transitioning to a plant based diet in high school, I have been searching to recreate the goodness of Annie’s. The creative Detoxinsta’s “The Best Vegan Mac n’ Cheese” recipe inspired this vegan, gluten-free mac and cheese that brings back memories of Annie’s from my younger years.


For the cheese sauce:

  • 1 1/2 cups macadamia nuts
  • 3/4 cup water
  • 3 tablespoons lemon juice
  • 1/4 cup nutritional yeast
  • 1/2 teaspoon dijon mustard
  • 1 1/2 teaspoon sea salt
  • 1/2 teaspoon chili powder
  • 1/2 clove garlic
  • pinch turmeric
  • pinch aleppo pepper
  • dash ground black pepper

For the pasta:


1. Bring a large pot of salted water to a boil. Prepare the pasta according to the instructions on the box.

2. Place the cheese sauce ingredients into a food processor and blend on the highest speed until smooth.

3. Add the cheese sauce to the cooked pasta and serve!
