Shakti Bowl

Last week, I celebrated one of my soul sisters, Addie’s birthday. Addie and I often eat Life Alive, our go-to plant-based Cambridge restaurant. For Addie’s birthday, I recreated her favorite Life Alive meal, the Swami Bowl. In honor of Addie’s radiant strength, I have renamed it the “Shakti Bowl.” I highly recommend visiting Life Alive if you are in the Boston area (they also have locations in Lowell and Salem)! Check out ROO’s other Life Alive recreations, including, the Mystic Mountain Mama Salad, the Coconut Revive Smoothie, and the Helpful Healer Bowl. Bowl Ingredients: *Serves 2 *  2 cooked cups brown …

Powerhouse Teff Pancakes

As many of you know, I had the privilege of working in Ethiopia in Fall 2014 and eating injera bread on a daily basis. Injera comes from the ancient grain teff, which is gluten-free and high in calcium, protein, and fiber. I have enjoyed experimenting with teff flour since returning to the US, including ROO’s Teff Nuttzo Cookie. Jenné Claiborne, creator of Sweet Potato Soul and ROO podcast interviewee #103 has a delicious teff pancake recipe that inspired me to start developing my own recipe. I encourage you to not only enjoy these pancakes for Sunday brunch, but make these …

Carrot Cake Power Protein Smoothie

As a young girl, I would always ask my mom for a carrot cake on my birthday. When I transitioned to a vegan diet ten years ago, I wondered how I could recreate a plant based carrot cake alternative. Around the same time, people began to ask me where I would source my protein from. This smoothie is like cake in a bottle and packed with protein. Carrots are high in beta-carotenes, potent anti-oxidants that have the immune supporting benefits of vitamin A. Nuttzo, hemp hearts, Viva Vanilla Vega Protein Powder, and almond milk, fuse into a rainbow of protein power, that …

Caesar Salad Celebration

As a little girl, I would often steal my mother’s croutons since I considered them to be the best part of her caesar salad. After being diagnosed with celiac disease and transitioning to a plant-based diet, I no longer reached for the croutons and wondered whether I could remake a caesar salad that I could eat. Lottie Bildirici, my friend, ROO interviewee #115, chef, and health coach recently published a plant-based caesar salad dressing. Lottie’s dressing inspired me to recreate the other essentials of a caesar salad, including the cheese and croutons. For additional substance, I have added roasted sweet …

Chocolate Raw Love Milk

Some people drink coffee in the mornings to wake them up, I opt-for a natural buzz that comes from raw cocoa. This milk was inspired by Raw Love, a raw vegan restaurant in Tulum that I ate many meals at during my recent tropical getaway. Fresh coconuts were plentiful in Meixco and I would often find unopened coconuts scattered on the roads where I ran. I was tempted to pack some of them for my journey home. This milk brings me right back to the vibrant cuisine of Raw Love, owned by the calmest power couple I’ve ever met, Adan …

Avocado Basil Pesto

In the cold of the winter, I like to dream about summer, tropical fruits, and days at the beach. Among these fantasies are warm summer nights with pesto pasta salads for dinner. I have brought summer to winter with my avocado basil pesto— it is creamy, light, vegan, nut-free, and simply, delicious! I have also discovered a new brand of gluten-free pasta called Tolerant that are made from two types of legumes, red lentil and black bean. This Avocado Basil Pesto was a perfect match for the Tolerant Red Lentil Penne and almost tricked me into thinking it was summer! …
