Chia Chocolate Nuttzo Pudding

I love routine— this includes eating the same breakfast everyday— that would be my Everything Oatmeal with Nuttzo on top, to be exact. With the turning of the New Year, I have challenged myself to experiment with other nutritious morning options. Ingredients: 1 cup unsweetened almond milk 1/4 cup chia seeds 5 medjool dates, pitted 3 tablespoons unsweetened cocoa powder 1/2 teaspoon pure vanilla extract 1 tablespoon Nuttzo Handful of blackberries, to taste Recipe: Add the almond milk, chia seeds, dates, cocoa …

Coconut Curry, Cashew, and Lentil Soup

I was intrigued since it had many ingredients I love: cashews, curry, lentils, and greens. I have adapted the recipe to include more coconut and added sweet potatoes, two of my favorite foods from the ROO kitchen. It is a nutritious, flavorful, and hearty meal to kickstart your plant-powered palate in 2015! Ingredients: 1/2 cup whole cashews 1 large handful baby spinach 1 medium sweet potato, peeled and diced 1 cup uncooked red lentils, rinsed and drained 1 inch minced peeled ginger 1/2 large onion, diced 3 cloves of garlic, minced 3 tablespoons coconut oil, liquid 3 teaspoons curry powder …

Teff Nuttzo Cookie

I had the joy of living in Ethiopia and eating injera bread daily. Injera comes from the powerhouse grain teff, which is gluten-free and high in calcium, protein, and fiber. I was beyond excited to find that Bob’s Red Mill sells teff flour and began dreaming up all the teff treats I could make.  ROO’s Teff Nuttzo Cookie reminds me of a shortbread cookie in consistency and has a delicious nutty taste highlighting Nuttzo’s seven different nuts and seeds. If you want to make Santa happy, consider leaving the Teff Nuttzo Cookie with the Cashew Christmas Milk under the tree. You may …

Christmas time is always filled with feelings of nostalgia for me. It brings back many memories of family gatherings, midnight masses, and leaving cookies and milk for Santa. This cashew christmas milk is perfect for Santa— sweet, filling, and nutritious! Ingredients:  3/4 cup of ground cashew meal 1 cup of coconut water 1 cup of filtered water 1 tablespoon of honey 1 teaspoon of vanilla extract 1 teaspoon of hemp seeds Dash of cinnamon Recipe: In …

GraNutOla: Nutty Granola

I can still remember discovering Angela Liddon’s blog Oh She Glows for the first time and being absolutely in awe at her delicious, innovative, and colorful plant-based creations. When she published The Oh She Glows Cookbook in March 2014, I had it on pre-order before it was out! One of my favorite recipes is her “Ultimate Nutty Granola Clusters.” I have adapted the recipe to include even more nuts and enjoy it best with a scoop of Nuttzo over my Buddhaful Smoothie! Ingredients: 1 cup almonds 1/2 cup walnut halves or pieces 1/2 cup pecan pieces 1/2 cup sunflower seeds 1 …

Helpful Healer Bowl

As you may remember from my Mystic Mountain Mama and Coconut Revive recipes, one of my favorite restaurants in Cambridge is Life Alive. They make scrumptious, nourishing meals that are primarily plant-based. I highly recommend visiting their restaurants if you are in the Boston area (they also have locations in Lowell and Salem)! My go-to warm meal at Life Alive is their Healer Bowl. I have recreated and renamed it the Helpful Healer Bowl. Anytime I find I need to reset my palate, this meal does just that. The zesty earthy, and nutritious ingredients help heal me from the inside-out. Ingredients: …
