Sweet Baked Plantains

There are some tastes you will never forget. I can still remember my first grade self trying to trade my brother for his fried plantains. It was a no go— I had already finished my serving of plantains, a customary dessert in Dorothey’s household. Years later, I still dream of my mom’s godmother, Dorothey’s delicious fried plantains. I have recreated Dorothey’s plantains in a healthier version that can be enjoyed as a guilt-free dessert! They are oven-baked and have a sweet taste with the coconut and cinnamon glaze. Ingredients: 2 ripe plantains 1 tablespoon coconut oil 1.5 teaspoon coconut sugar …

I created this “Everything Oatmeal” to include many of my favorite superfoods and all it needs is hot water! At the start of each week, I prepare individual oatmeal packs for my morning and this recipe reflects one morning’s serving. In addition, it features the delicious Nuttzo! Ingredients: 3/4 cup of quick oats (Bob’s Red Mill Gluten Free Quick Cooking Oats is my …

Coconut Revive

As I mentioned in my Mystic Mountain Mama post, one of my favorite restaurants in Cambridge is Life Alive. They make scrumptious, nourishing meals that are primarily plant-based. I highly recommend visiting their restaurants if you are in the Boston area (they also have locations in Lowell and Salem)! My second love at Life Alive, after their Mystic Mountain Bowl, is their Coconut Alive Smoothie. I have recreated it in my college kitchen and renamed it “Coconut Revive.” Revive refers to its potent power to revive me from my senior thesis slumber. Ingredients:  1 cup of almond milk 1 frozen …
