One Love Bowl

One of my favorite recipes from Rich Roll and Julie Piatt’s “The Plantpower Way,” is their One Bowls. The One Bowl allows for creativity, balanced nourishment, and is an easy-to-assemble lunch or dinner. One Bowl consists of five general categories, a legume, a grain, a green, a whole food, and a sauce. I was inspired to develop a One Love Bowl with my loves, Hilary’s Eat Well Root Veggie Burger and a new ROO sauce I have been enjoying. Ingredients: Handful of sprouted beans (legume) 2 Hilary’s Eat Well Root Veggie Burgers (grain) Handful of kale, sautéed (green) Beet and carrots, …

ROO #135: Rachele Pojednic on Changing the Nutritional and Lifestyle Landscape of America

“I think that’s why professionally I do both: so, I’m in that sweaty dark studio with the music blaring and then at the other part of my day, I’m looking at what scientifically is going on in your body during those times. So, its a really nice balance.” * In this episode, Rachele Pojednic, research fellow at the Institute of Lifestyle Medicine, doctorate in Biochemical and Molecular Nutrition & Exercise Physiology, spin instructor at Flywheel Sports, and creator of Strong-Process, reflects on the lessons she learned as a coxswain for Northeastern’s DI Men’s Varsity Rowing Team. She discusses how she balances spin instructing at Flywheel Sports with her full-time research fellowship at the Institute of Lifestyle Medicine. Rachele explains the numerous research studies she is involved with that are devoted to the intersection between food and movement. She also provides insight on how America can make behavioral changes that will transform the nutritional and lifestyle landscape. Rachele reveals her perspective on the numerous fad diets and discusses the science behind what really works. Lastly, Rachele previews exciting upcoming projects and research.

Harvest Revive Smoothie

As part of the #SummerofROO Instagram Challenge, co-hosted by Susie of @longrunergy and I, we are asking participants to share a daily ritual that nourishes, grounds, and reinvigorates your spirit. Green smoothies revive my spirit on a daily basis. As a young girl, I could have never imagined that I would crave a green drink, but, my taste buds have turned and a day does not feel complete without my green smoothie-fix. One of my favorite go-to plant-based Cambridge restaurants is Life Alive, which has inspired many ROO recipes. At Life Alive, their “classic” green smoothie is called the Harvest …

Amaranth Plant Power Pizza

I recently discovered the super grain amaranth, which is gluten-free and a source of complete protein as it contains all the essential amino acids. Amaranth’s nutty and earthy flavor won me over and I was inspired to begin experimenting with it. Lottie Bildirici, my friend, soul sister, creator of Running on Veggies, and ROO podcast interviewee #116, developed a quinoa pizza crust that was a big hit among my family and friends. Lottie’s quinoa pizza crust recipe showed me how to make reimagine pizza in its gluten-free glory! I have developed this amaranth pizza to be the perfect Meatless Monday …

Shakti Bowl

Last week, I celebrated one of my soul sisters, Addie’s birthday. Addie and I often eat Life Alive, our go-to plant-based Cambridge restaurant. For Addie’s birthday, I recreated her favorite Life Alive meal, the Swami Bowl. In honor of Addie’s radiant strength, I have renamed it the “Shakti Bowl.” I highly recommend visiting Life Alive if you are in the Boston area (they also have locations in Lowell and Salem)! Check out ROO’s other Life Alive recreations, including, the Mystic Mountain Mama Salad, the Coconut Revive Smoothie, and the Helpful Healer Bowl. Bowl Ingredients: *Serves 2 *  2 cooked cups brown …
