Amaranth Plant Power Pizza

I recently discovered the super grain amaranth, which is gluten-free and a source of complete protein as it contains all the essential amino acids. Amaranth’s nutty and earthy flavor won me over and I was inspired to begin experimenting with it. Caesar Salad Celebration

As a little girl, I would often steal my mother’s croutons since I considered them to be the best part of her caesar salad. After being diagnosed with celiac disease and transitioning to a plant-based diet, I no longer reached for the croutons and wondered whether I could remake a caesar salad that I could eat.
