Chia Chocolate Nuttzo Pudding

I love routine— this includes eating the same breakfast everyday— that would be my Everything Oatmeal with Nuttzo on top, to be exact. With the turning of the New Year, I have challenged myself to experiment with other nutritious morning options. Ingredients: 1 cup unsweetened almond milk 1/4 cup chia seeds 5 medjool dates, pitted 3 tablespoons unsweetened cocoa powder 1/2 teaspoon pure vanilla extract 1 tablespoon Nuttzo Handful of blackberries, to taste Recipe: Add the almond milk, chia seeds, dates, cocoa …

Gratitude

I am headed to Ethiopia today and overwhelmed with gratitude for the support of family, friends, and strangers as I have prepared for my trip. My fundraising campaign for the Yaya Girls Running Program in Sululta, Ethiopia was a huge success! I surpassed my goal and raised over $8,000, which will not only fund four young Ethiopian women for the upcoming trimester, but also contribute to future Yaya Girls scholarships. Numerous companies have donated incredible gear and goodies for the Yaya Girls. Oiselle, which I run for, has contributed beautiful shirts with inspiring running designs on the front! Health Warrior has …

Sweet Potato Pad Thai with Nuttzo

During high school, I ate at my first raw vegan restaurant. I was amazed at how they made spaghetti with long zucchinis strands— how did they do this, I thought! I soon found out about spiralizers. Sprializers allow you to slice long vegetable strands in seconds! I found my spiralizer on Craigslist for less than $10 and after a few years of letting it dust on the shelf during college, I have rediscovered its magic. I love sweet potatoes, almost as much as I love pad thai— so why not combine them?! This recipe requires a spiralizer so that you …

Purely Nuttzo Bread

In Spring of 2013, I discovered a soul sister on Instagram. A soul sister is someone who shares your passions, inspirations, and gets you. Lottie is passionate about plant based cooking and pursuing a healthy lifestyle. Her Instagram @runnningonveggies is one of the most creative, beautiful, and nutritious compilation of plant-based creations I have ever seen. Lottie lives in New York City and when she is not studying for college classes, she is selling raw/vegan deserts and developing recipes for the highly-regarded Candle Cafe. One of my favorite recipes on Lottie’s blog is her Monkey Bread. I adapted Lottie’s recipe …

Excited to Represent Nuttzo as an Athlete Ambassador

I just returned from three weeks of working at Green Mountain Running Camp for high school students. One night at camp, we were discussing our favorite food and hands down, I exclaimed “nut butter, Nuttzo to be exact– I can eat it straight out of the jar!” Since discovering Nuttzo through Lindsay Cotter, gluten-free goddess and ROO podcast interviewee #48, it has become a daily part of my diet. As a plant-based, celiac, nut butter is an amazing source of protein and fat for me. Nuttzo is unique in that it does not focus on only one nut, but instead …
